Chef Miguel Aguilar is a Peruvian culinary innovator who reimagines tradition with bold creativity. Trained by Iron Chef Bobby Flay, he masterfully blends fresh ingredients with global influences, transforming classic techniques into dynamic, unexpected flavors. His roots run deep—his great-grandfather introduced mussels to the Peruvian palate in the 19th century, pioneering a legacy of culinary discovery.

A self-taught chef fueled by curiosity, Miguel refuses to settle for convention. He explores forgotten ingredients and undiscovered flavors, challenging expectations and redefining culinary borders—earning him a reputation as a rebel in the kitchen.

Miguel is the creator and owner of Surfish Bistro, a beloved Brooklyn destination known for its fresh, innovative take on Peruvian cuisine. Now, with the opening of Inkaico, he continues to push boundaries, crafting a menu that honors tradition while embracing the future of flavor.
